Bees make honey from the nectar they sip from the hearts of blossomed flowers. A long and tedious process is required to transform the nectar into the thick, golden substance we call honey.

Glucose and fructose are the major sugar found in honey. They are simple sugar that can be absorbed by our body. Honey also contains proteins, carbohydrates, hormones, organic acids, and antimicrobial compounds. Honey is a good carbohydrate. It is a rich storehouse of essential vitamins, minerals and trace elements for our human body.

Honey is a natural energizer as it is a source of rapid supplied energy. Applied to injury, minor abrasions and burns, honey can aid in healing. Honey is an effective antimicrobial agent. Taken in any way, whether stirred in coffee or tea, spread on toast or simply eaten by the spoonfuls, honey will boost our daily supply of antioxidants.

There are 3 forms of honey, namely liquid honey, crystallized honey and semi-crystallized honey. Liquid honey is honey that is free from visible crystals. Crystallized honey is honey that is solidly granulated or crystallized, irrespective of whether candid, creamed or spread types of crystallized honey. Semi-crystallized honey is honey that is a mixture of liquid honey and crystallized honey.

Most honey will crystallize after it is removed from the comb; some kinds of honey crystallize just a few days after being extracted, whereas other types remain liquid for weeks, months and even years. Honey consisting of a greater proportion of glucose to fructose will granulate/ crystallize faster. Different flower nectars have different proportions of these sugars.

Although most varieties of honey crystallize after extracting, those that contain less glucose such as LONGAN FLOWER HONEY resist granulation / crystallization.

If honey is fermented, bubbles will start to appear. The honey will start to produce a sour smell and there will be a “pop” sound when the bottle cap is opened.

Though they are best known for their honey, honeybees also produce Propolis, royal jelly, and bees wax. These substances have many uses. Propolis is used as an anti-bacterial substance, royal jelly is used as a natural health supplement, and bees’ wax makes great candles. All the substances that honey bees’ produce have powerful natural healing properties.

The colour of honey form a continuous range from water white (clear) through amber (gold) to dark amber (black). The colour of honey is related to its mineral content and is characteristic of its floral source. Light colour honey typically has a mild flavour while dark colour honey is usually stronger in flavour.
